Restaurants present a complex and demanding air quality environment. Kitchen cooking generates smoke, grease aerosols, combustion byproducts and significant VOC loads. The dining area combines high occupancy with the expectation of a pleasant, odor-neutral ambiance — a difficult balance without dedicated air purification.

Indian restaurant environments add further complexity: high-temperature cooking with strong spices, tandoor ovens generating smoke and particulate, and often inadequate mechanical ventilation in older buildings.

For dining areas, the priority is rapid removal of cooking odors and smoke that migrate from the kitchen, combined with sufficient ACH to handle the CO₂ load of a fully occupied dining room. A minimum of 6 ACH is appropriate; 8–12 ACH is recommended for high-occupancy restaurants or those with open kitchens.
